Quick Refrigerator Pickles: From the vine to the brine

“So, these are from your garden?” he asked, showing the proper amount of curiosity, knowing how excited I was to share my new pickles. 

“Yep! I picked that cucumber two days ago and put him straight into the jar. From the vine to the brine!”

“Wow!” he said, eyes wide, as he crunched down on a fridge pickle. “These are actually really good!”

And that my friends, is why we garden. 

Ok, it’s not the only reason, but it sure is satisfying to see your hard work become delicious food. Zero-hesitation food is what I’m after. Grab it without thinking food, that is healthy. When we grow our veggies, we eat them. The goal is to use everything we harvest, and to make it the star of the show. I want our family to know food better – and know better food. To appreciate it, savor it, and realize that what we grow will taste better, and that what we consume impacts not just us, but also the world at large. Literally, the actual earth. 

I was discussing the future of my cucumbers with my step-mother recently and she said her pickles never had a crunch. It made me think that the cooling of the brine is probably what does that. Be sure to let your brine cool around the cucumbers before putting them in the fridge. You don’t want that hot water trapped inside the jar. Similar to leftovers, which should always cool on the counter before going into the fridge to save them from being soggy (in case you didn’t know, and were experiencing smooshy leftovers).

Quick Refrigerator Pickles

Recipe for one 24 oz jar

INGREDIENTS

1 large cucumber 

2cup water

1 cup vinegar

2teaspn sugar

2 teaspn dill

Salt

Pepper

2 garlic cloves cut in half

INSTRUCTIONS

  1. Put water, vinegar, and sugar into a saucepan over medium heat. Stir until dissolved (about 3 mins.) to make a brine. 
  2. Let sit and cool off burner for about 5 mins. 
  3. Cut your cucumber into spears, and place into jar with garlic, dill, salt and pepper.
  4. Pour brine into jar.
  5. Let jar reach room temperature on the counter.
  6. Refrigerate overnight for one night.

With everything that I’ve loved deeply in life, I wish I started sooner. Wish I found my husband sooner, had babies younger, got into gardening and started making it my life a decade earlier. 

If I would have listened to the nudges and trusted them more, I would have. In fact, the story of how my husband and I fell in love is ALL about a second chance he took on me a year after I “wanted to be friends” 🤦🏻‍♀️. But he was the one all along. There’s a psychic and roller skates and magic moments woven throughout the story - a tale for another day. 

Fast forward a few years and I almost never started my first garden if my husband hadn’t challenged me to finally act on my supposed dream to have a big garden. 

Luckily, I started documenting it from the get go! But I didn’t take the leap into making it my business somehow until about two years later. 

While it’s fun (er, maybe depressing) to play the what if game, I look back and feel so proud of when I finally took the leap into the unknown, investing in my heart. I knew I wanted to keep gardening and sharing, but had no clue what I was doing. 

Now, being able to help others take that leap - take what they love and make it what they *do* - it’s the ultimate full circle. 

My one-day (maybe even just one time!) masterclass in making your passion your business via Instagram, is OPEN. 

I am so excited to meet whomever is meant to be in this even with me. It’s a live zoom, and I’ll be POURING my heart and all my knowledge into it. Years of my own investment, experience, and insight, coming straight to you. 

My goal has always been: do what I love and spend time with whom I love. Work on my own schedule, make a full-time income, be present for my family. And Some days I can’t believe I’ve actually done it!!

Why water with soaker hoses, you ask? I’ll tell you. 

They’re flexible, moveable, controllable, and hide well.

I love hand watering too, but this is much more of a long term and steady choice.
