10 Spinach Recipes
Spinach is a gardener’s go-to for cool-season growing. This year I successfully grew spinach from seed and learned that it’s much more resilient than lettuce. I actually grew Tatsoi, which is a very close relative and a bit sweeter/ less bitter. I’ve been throwing my yummy leaves into everything and wanted to share ten of my favorite spinach recipes so that you can enjoy this green powerhouse too!
Spinach Health Benefits
They say to eat the rainbow in terms of having each meal full of color. Spinach is a go-too for greens because it’s so packed with iron and nutrients.
Some of the main health benefits that you get with spinach are the flushing out of free radicals via zeaxanthin and carotenoids (cancer fighters), reduction in blood sugar, and it works as an anti-inflammatory.
Spinach is indeed a superfood.
Growing Tips for Spinach
Spinach is an easy one to germinate and does prefer to be direct-sown. However, its sprouts need some coverage. I covered mine this year with chicken wire cloches to keep birds and pests away, which allowed them to really thrive. My spinach was planted in soil that’s part compost part native clay and did really well. I watered less than normal which I do think helped once the spinach was sprouted. My spinach got about six hours of sun a day and was shaded for that afternoon heat.
Honestly, I pretty much ignored this plant and it thrived! I’d say it’s worth trying to grow even if you’re uncertain of the growing conditions. It’s been a real savior to have so much green to throw into dishes, whether it’s a spinach recipe or not!
