Easy Homemade Gnocchi in Cream Sauce
These little gnocchi pillows are light and tender. So easy to make! I can’t wait for my sweet potatoes to come in so we can use them in this way. Kneading any sort of dough, for however long or brief is therapy to me, so I loved this recipe simply for that tiny pleasure.
This is a great weeknight dinner and easy way to use up garden potatoes.
Easy Homemade Gnocchi in Cream Sauce
Gnocchi
3 Russet potatoes scrubbed
1 1/2 cus flour
1 teaspoon salt
1 egg
Add potatoes to pot with water filled at least 2 inches above potatoes and bring to a boil. Reduce heat to simmer for about 30 minutes with lid half covering the pot. I don’t know why we do this, but it works.
Once potatoes are fork tender, remove from water and use tongs to peel skin off – this should be very easy to do. Let potatoes cool for about 30 mins. Use a potato ricer or a cheese grater to make potatoes a fine fluffy mass. Then add egg and mix. Next, mix your flour and salt, then slowly fold into potatoes.
The key is to not over mix the potatoes, as they are supposed to be delicate and fluffy. Once the dough forms, it should be a little sticky and hold shape. Press it into a ball in the bowl and then turn out onto a floured surface. Knead the dough gently until smoothish. Once dough is done, set aside, scrape up any remnants and re-flour your surface.
Grab about a handful of dough and work into a long rope, rolling with your hands. It should be about 1/2 inch thick. Then cut off little 1/2” gnocchis and roll against a fork for fun detail if you’d like.
Place gnocchi on a lightly floured piece of parchment and use within a couple of hours.
To cook, boil them in salted water (like pasta) until they float (about 4 minutes).
Cream Sauce
INGREDIENTS
1 Tablespoon butter
2 cloves garlic minced
3/4 cup chicken stock
1 cup heavy cream
1 cup parmesan
INSTRUCTIONS
Heat butter over Medium in a skillet and add garlic for just a minute. Add in chicken stock and heavy cream and reduce heat to low, stirring frequently. Reduce to simmer and add parmesan in batches – don’t let my recipe stop you – add as much as you want!
*I added peas and micro greens to this, to make it more efficient for the family to get some veggies. Feel free to do that too, or add corn, ground beef, etc.!
